Quinoa Crunch Salad

Delicious salad that takes very little effort! Tastes great with cucumbers, carrots, bell peppers, edamame, scallion…go crazy!

Ingredients
  • 1/3 cup Soy Sauce
  • 1/3 cup Rice Vinegar
  • 1 tablespoon Sriracha
  • 1/2 cup of Silky Smooth Peanut Butter
  • 2 tablespoons Honey
  • 2 tablespoons Sesame Oil
  • Cooked Quinoa (enough for 2-3 ppl)
  • Veggies of your choice
  • Cashews (or your favorite nuts for some crunch!)
  • Let's Do This!
  • 1 — Put the PB, soy sauce, rice vinegar, honey, sesame oil, and sriracha in a bowl and stir until combined.
  • 2 — Put your cooked quinoa in a bowl with your veggies and nuts.
  • 3 — Pour your dressing over the quinoa and mix until combined.
  • 4 — Enjoy!
